Bear in mind i dont have a deep fat fryer lol

First go out and get a fire extinguisher and blanket, then make a teatowel damp and put all very close to your cooker

Use a normal Pan and fill 1/3 with oil, mix up the batter you want (beer batter's really nice for them tho), coat chicken pieces and fry carefully

Kim I tried chicken in beer batter, it was a bit bland, you need to add loads of seasoning

you need to coat the chicken in flour, make batter with cold beer & SF raising flour, add whichever spices you like. Dip the floured chicken in the batter & fry

marinade the chicken in a little oil and 5 spice for a couple of hours.make the batter with self raising flour,5 spice, chilli powder, pepper and salt mixed at the last minute with sparkling water. whisk quickly and it is better if not whisked smoothly.

bring vegetable oil up to heat .i half fill a wok. dip the chicken into the batter and into the wok.......makes a heck of a mess by the way! cook in batches and drain well on kitchen paper.

you can also use cooked chicken which cuts the cooking time right down.

serve with chilli sauce or sweet and sour vegatables...not out of a jar!!!!......and boiled rice.
