Lemon madeira cake for Nicky 5 Replies

you will need:
6oz butter/marg
6oz caster sugar
3 large eggs
5oz SR flour
4oz plain flour pinch of salt
4oz cut mixed peel
1-2 tablespoon lemon juice

Grease 7" cake tin beat butter till soft add sugar and cream until light n fluffy. Add eggs 1 at a time. Fold in SIFTED flours and salt.

Add lemon juice and peel mix well.
Turn the mix into cake tin and cook at gas mark 3 in centre oven for 1-1hour 15 min (mine was done in 1 hour).

Let cake cool.and make buttercream icing.

4oz butter-marg
6oz icing sugar
1 tablespoon lemon juice.

beat butter till soft and gradually beat in SIFTED icing sugar add lemon juice.

This will more than cover the cake. To decorate you could decorate with lenon sugar decorations to make it look fab.
