I have never been able to bake so I invested 20p in a cookery book from local church sale and I have made a cherry and coconut cake and a walnut and coffee cake. I am so impressed with my baking.

Mix the sponge from a victoria sponge recipe add chopped cherries and shavings of coconut, put in the oven and ta da!!!!

Um Clare, I think that'd make it really heavy and dry, coconut takes all the moisure when you cook with it, which is why it's really hard to find a good coconut cake recipe!

use diluted coconut milk as the liquid in the cake mix.........

12OZ SR flour
pinch of salt
6oz margerine
8oz glazed cherries
2oz dessicated coconut
6oz caster sugar
2 large eggs
1/4 pint milk
granulatred sugar.

grease an 8" round cake tin. sift the flour and salt into a bowl and rub in margerine.

quater the cherries toss them in the coconut and add with the sugar into the flour stiring lightly to combine.

and stir into the mixture together with the milk to give a stiff but dropping consistency.


Turn the mix into tin and sprinkle with granulated sugar
Bake in center of oven gas mark 4 for ABOUT 11/4 hours.(time may be 5-10 min longer it was for mine)
